Step 1: Open a new document that is 300 x 300 pixels in size. Then create the text that you would like to turn to stone.

Step 2: Now rasterize this text by going to Layer->Rasterize->Type. Then set yourforeground colour to white and your background color to black. You can hit D and then X to do that quickly.
